This elegantly simple cake with its moist vanilla sponge, strawberry jam and Cake Angels cream doesn't need to try too hard to be absolutely delicious.

Carrot Cake
Unlike a lot of people I don't believe the whole point of carrot cake is the American style cream cheese frosting. The cake is so much more it's incredibly rich and moist flavoured with spices and full of nuts, sultanas and of course carrots!
The cake is finished with a light coating of orange flavoured glace icing and decorated with walnuts.

Rich Fruit Cake
The kind of fruit cake that I like best is indecently moist and sticky and full of fruit.
This cake is mouth wateringly indulgent and if kept in an air tight tin will last for weeks. For an extra treat why not frying slices with a tablespoon of honey.....delicious.
Freezes well.
